Easy Chicken Recipe
Since I was out most of the day I was so tired that I didn't want to cook too much. So I made a simple chicken dish. All I did was get a dry ranch packet, add 2 cups of Italian bread crumbs and mix well. I covered chicken breasts in the bread crumb mixture (don't use it all, what you don't use put in a air tight container) and cooked the chicken at 400 degrees for 30 minutes. I also made rice and green beans. Was such a yummy dinner and super simple!

Potato Soup
This is a fall favorite for my family, its super easy to make and there is so much you can add to it! We love to have this on a chilly fall day, it will just warm you up. Here is the recipe:
1/4 Cup butter
1cup chopped onion
1cup chopped celery
1/2tsp Salt
1/2tsp cayenne
2 Bay leafs
3TBS garlic
8 cups of chicken broth
2lbs diced potatoes (peeled or not depending on what you like)
1/4 cup of heavy cream
Melt the butter in a heavy pot or dutch oven over medium-high heat. Add onion, celery, salt and cayenne. Cook stirring until onions are soft and lightly golden, about 5minutes. Add in garlic and bay leafs and cook for about 3 minutes. Add potato's and broth and bring to a boil. Turn down the heat to medium-low and simmer for 30 minutes.
Remove the soup from the heat and discard the bay leafs. Put the soup in a blender in stages until smooth. Stir in the heavy cream and enjoy!
I add shredded cheese on top but you can add anything to it! I hope Y'all enjoy this soup as much and me and my family do!
